"In all living systems various polyglycans exist having essential functions that are closely linked to glycan structures. All structural features of glycans are mediated by kinetic properties of glycan synthesizing enzymes. Glycan-related enzymes often non-covalently bind to the carbohydrate substrate(s) by regions different from the active site. Removal of these binding sites often strongly affects carbohydrate specifics of the enzyme. The book describes recent progress in polyglycan-related enzymology.
